Garlic Green Beans

Super easy and healthy green bean recipe where garlic, onions and butter help bring it all together.

Green Beans
6 cloves of Garlic
6 green onions
1.5 tbs of Organic Butter or Ghee

In a small saucepan put your minced garlic, diced green onions and butter/ghee and saute until soft. Add a pinch of Kosher Salt.
Cook your green beans by boiling them or steaming them until they are done to your liking. Then combine everything in a bowl and serve.

Seared London Broil with Penzey’s Spices


Once I saw the meat options on the 21 Day Body Makeover and noticed I could have grass fed red meat once a week, I knew I needed to pull the trigger on that option Day 1 because it usually is the worst. I picked up a couple of grass fed london broil (not the best cut) but the grass fed options were limited Sunday. Seasoned lightly, seared and made a sauce recommend in the 21day recipes.

Grass fed Beef (6oz)
Penzey’s 4/S Seasoning
Penzey’s Black Pepper
1.5 tbs of Organic Butter
1 tbs of Brandy

Season your steak and let it come to room temperature. In a skillet on medium high sear both sides for about 4 minutes on each side. Turn off heat or go to low and add your butter and brandy (careful if gas burner it will ignite) Then put the cast iron skillet into a 375 degree oven and let it finish to your “doneness”.

Day 1 of my 21 day body makeover / detox

Quick Salad that meets the program’s requirements of veggies and lean organic protein with no sugar, fruit, dairy, nuts or gluten. Do I wish I had blue cheese or goat cheese in it with some nuts and fruits? Yes of course but gotta detox before the holidays.

Organic Free Range Chicken Breast
Organic unrefined Coconut Oil
Penzey’s Buttermilk Seasoning
Penzey’s Ruth Ann’s Muskego Ave Chicken and Fish Seasoning (lemon peel, K Salt, Pepper, garlic, onion)
Smidge of Kosher salt

2/3 Olive Oil
2/3 GF Balsamic Vinegar
Penzey’s Sunny Day in Paris Seasoning
Minced garlic clove

Sliced Carrots

1. Mix your dressing and shake well. I use a garlic crusher to get it as fine as possible.

2. Chicken – non stick grill pan. I butterflied my chicken breast and then I tenderized with mallet to get it even. I then added some heated up coconut oil and seasoned with Penzey’s seasonings (see above). Grilled until done and set aside. I went ahead and made three breasts for the week.

3. Combine dress and eat. You could keep all three components separate to keep from getting mushy if you happen to be taking it to work.

Opa Greek Chicken Kabobs


We hadn’t made Greek or Mediterranean in a while so I decided to whip up some kabobs with my lemon roasted potatoes and a Greek salad. I love vinegar and lemon tang paired with herby oregano. It just works and wakes up the palate. This recipe is super easy, healthy and quick for families who are squeezed for time but want to make a great tasting meal.

2 chicken breasts
Cherry tomatoes
Red onions

4 Lemons juiced
4 glugs of Olive oil
3 garlic cloves (minced)
Two pinches of Kosher Salt


Trim and cube your chicken and marinate for 24hrs. Slice your red onion about the size of your chicken cubes. Very simply put them on a skew and grill them up until the chicken is done.

WW Tequila Lime Tajin Chicken


Wanted to make my corn salad and decided to make a tequila lime chicken to compliment it and to also cut some calories. Skimmed my Weight Watchers recipe pile and had one similar to this that claims 4 points. Simple chicken recipe that is spicy, sweet and tangy.
2 chicken breasts
2 limes juiced
1 shot of tequila
2 tbs of Ancho Chili powder
2 tbs of Tajin Seasoning
Pinch of cumin
Squeeze of honey

Marinade the chicken overnight in a lime, tequila, saltwater, Ancho chili and one 1tbs of Tajin Seasoning. When ready to cook it mix the chicken breast in a bowl with honey and top with Tajin Seasoning and slices of lime. . Roast in a 400 degree oven for 40 mins or until done.
