Updated Peas and Carrots
Roasted Carrots and Peas

To compliment our chicken I decided to do a carrot and pea recipe with roasted potatoes.
Carrots roasted turn even sweeter and syrupy not to mention soft. Paired with the sweet peas with spices was a perfect compliment to our savory chicken.
The spices and lime juice really wake up this traditional side. The cumin and coriander bring some earthiness while the lime juice and ginger bring a pop to the sweet roasted peas and carrots. If you are looking for an easy side that might bum the kids out when they see it but cause them to raise an eyebrow when you force them to take a bite…this might be it.
Ingredients:
Carrots (peeled and quartered)
1 cup of Frozen Peas
2 tbs of olive oil
½ tsp coriander
½ tsp ground ginger
1 tsp of cumin
Lime juice
Kosher Salt and Pepper
Directions:
First Roast your carrots in a sheet pan with salt, pepper and oil at 400 for about 20-30 mins. Then remove and add your spices and lime juice and stir in your peas. Cook for another 5-10mins.

This little number was really really great. We had it with our spicy curry and it was a terrific compliment. Grapefruit from the Fresca, lime juice and Hendricks Gin with some basil to tie it all together.
Ingredients:
3 oz Hendricks Gin
1 can Fresca soda
1 lime (juiced)
fresh basil

Feta Elote with Tajin

Corn is just so darn cheap and sweet in the summer. When I fire up the grill, it’s hard not to buy corn and throw it on. Typical Elote has mayo and would be damn fine with Dukes but I decided to lighten it up a bit with sour cream. (you could use plain yogurt too). I also didn’t have Cojita cheese on hand so when with Feta. Finally you can play around with Elote but I think you almost always need to have “Tajin” seasoning. It’s a Mexican favorite that combines chili powder with lime juice so it has this unmistakably unique sweetness. At the top of the bottle it even has a label that reads “This is not a candy”.

Roast your corn on a grill or skillet. I like mine black. Squeeze a little lime juice and spread some sour cream to your liking. Top it with feta cheese and Tajin seasoning.
